RECIPE:
MUSHROOM RISOTTO, PARMESAN SHAVERS AND WHITE TRUFFLE OIL
Servings: 2 Cooking time: 40 Minutes
Ingredients:
WHITE TRUFFLE VIRGIN OLIVE OIL
Mushrooms 300g
Olive oil
Garlic
Fresh parsley
Arborio rice 300g
80ml of white wine
1 litre of vegetable stock
50g of shaved Parmesan
Wash and slice your favourite type of mushroom (we love porcini!). In a frying pan add olive oil, garlic and parsley. Add the mushroom, 1/2 tbsp of salt and let it cook for 10 minutes until the water from the mushrooms disappears. Add the Rice and cook until will get toasted. Add 80ml of white wine and let it evaporate.
Cook the Risotto adding some hot vegetable stock for about 18-20 minutes.
Dish up the Risotto adding Parmesan Shavers and our WHITE TRUFFLE VIRGIN OLIVE OIL.
