PAN FRIED COD WITH BLACK TRUFFLE BUTTER
Servings: 2 Cooking time: 20 minutes
INGREDIENTS:
2 medium Cod Fillet skin on
2 tbsp Black Truffle butter
garlic
parsely
salt and pepper
Clean and chop the garlic very thin. Place it in a pan adding 1 tbsp of truffle butter and chopped parsley. When the butter starts bubbling, add the fillet of Cod skin down. Cook for 3-4 minutes then turn it to the other side. Cook again for about 3-4 minutes being careful not to let it stick on the pan. Turn the cod skin down again and add the remaining butter. Allow to cook for another couple of minutes. Add some salt and pepper to taste. Serve immediately with some roasted potatoes and steamed vegetables.
