Boil a large pan of salted water. In the meantime clean the white truffle under the tap with a little brush, being careful not to scratch the skin.
Melt the butter in a frying pan and add half of the grated truffle and 1-2 tablespoon of boiling water. Turn the flame off.
Cook the pasta in the water and then add to the frying pan with some parmesan cheese, salt and pepper and cook over a low heat until the pasta is coated by the sauce. Add truffle oil to taste.
Share the pasta between 4 plates and shave the remaining white truffle on the top and serve immediately. Buon appetito!
